Quinoa and
Oats Pancakes

  • Quinoa (soaked overnight): 1/2 cup
  • Oats (soaked overnight in 1/2 cup milk): 1/2 cup
  • Buttermilk: 1 cup
  • Egg: 2
  • Ensure® Diabetes Care Vanilla shake: 1 serve
  • Extra virgin olive oil: 2 tbsp

Combine and blend all the ingredients, except the olive oil. The pancake batter should not be too thick. If too thick, add more buttermilk. Heat a non-stick pan. Add a little olive oil and heat it. Add a ladleful of the batter to the pan. Wait till the edges turn golden. Flip the pancake. Cook for 5 min. Serve the pancake with a drizzle of yogurt, instead of honey.
