Combined with appropriate monitoring of the condition and physical activity, good nutrition can help keep your blood sugar in the blood and reduce the risk of heart attack, stroke or kidney failure.

Recipe with Ensure Diabetes Care

1. White Chocolate Fudge

Ingredients:

  • White chocolate chips: 250 g
  • Ensure® Diabetes Care: 5 tbsp
  • Almond powder: 5 tbsp

Method:

Melt the chocolate chips in a double boiler. Switch off the heat and add Ensure® Diabetes Care and almond powders and mix well. Spread the mixture in a parchment-lined rectangular baking tin. Refrigerate. When set, cut into rectangles.

2.Mocha Shake

Ingredients:

  • Low-fat milk (or almond milk): 1 cup
  • Brewed coffee: 2 tbsp
  • Ensure® Diabetes Care vanilla (or rich chocolate) shake: 1 bottle
  • Crushed ice cubes: 1/2 cup
  • Maple syrup: 1 tsp
  • Cocoa powder: 2 tbsp

Method:

Blend all the ingredients together. Pour the shake in a glass and serve chilled.

3.Healthy Pineapple and Coconut Kulfi

Ingredients:

  • Hung curd: 1 cup
  • Ripe banana (finely chopped): 1/2 cup
  • Pineapple (finely chopped): 1/2 cup
  • Tiny pieces of the soft white part of a tender coconut: 1 cup
  • Ensure® Diabetes Care: 3 tbsp

Method:

Mix the ingredients gently and evenly using a spoon. Fill this mixture in kulfimoulds and freeze for three hours, or until set.

4.Healthy Oats Laddoo

Ingredients:

  • Oats digestive biscuits: 1 pack (finely powdered)
  • Ensure® Diabetes Care: 4 tbsp
  • Ghee: 1.5 tbsp
  • Milk: 1 tsp

Method:

Combine all the ingredients together and knead. If needed, use a little more ghee to bind the ingredients into a smooth dough. Make small laddoos. These laddoos can be stored up to 15 days in the refrigerator.

5.Guilt-free Quinoa Kheer

Ingredients:

  • Quinoa (soaked overnight): 1 cup
  • Skim milk: 1.5 ltr
  • Ensure® Diabetes Care: 5 tbsp
  • Green cardamom powder: 1/2 tsp
  • Toasted almonds, and raisins: for garnish

Method:

Boil the milk and stir continuously until the volume is reduced to 1/2. Boil the quinoa for 10 min in this milk. Remove from the gas stove. When the kheer is still warm, add the cardamom and the Ensure® Diabetes Care and mix properly so that there are no lumps. Garnish with almonds and raisins before serving.

6.Creamy Chicken Soup

Ingredients:

  • Boneless chicken pieces: 250 g
  • Buttermilk: 500 ml
  • Finely chopped celery: 1 cup
  • Garlic (chopped): 2 tsp
  • Onion (chopped): 4 tbsp
  • Lemongrass stem (finely chopped): 2 tbsp
  • Avocado: 1
  • Soy sauce: 1 tbsp
  • Salt and pepper: according to taste
  • Ensure® Diabetes Care: 4 tbsp

Method:

Combine all the ingredients, except Ensure® Diabetes Care. Pressure-cook until two whistles. Switch off the gas. Open the cooker lid and remove the chicken in a bowl. Blend the remaining soup in a blender. Filter the soup through a large sieve. Add the Ensure® Diabetes Care and adjust the seasoning. Add the chicken pieces back to the soup. Enjoy the healthy and delicious soup!

7.Quinoa and Oats Pancakes

Ingredients:

  • Quinoa (soaked overnight): 1/2 cup
  • Oats (soaked overnight in 1/2 cup milk): 1/2 cup
  • Buttermilk: 1 cup
  • Egg: 2
  • Ensure® Diabetes Care Vanilla shake: 1 bottle
  • Extra virgin olive oil: 2 tbsp

Method:

Combine and blend all the ingredients, except the olive oil. The pancake batter should not be too thick. If too thick, add more buttermilk. Heat a non-stick pan. Add a little olive oil and heat it. Add a ladleful of the batter to the pan. Wait till the edges turn golden. Flip the pancake. Cook for 5 min. Serve the pancake with a drizzle of yogurt, instead of honey.

8.Chicken and Barley Breakfast

Ingredients:

  • Chicken (boneless): 1 kg
  • Barely: 1 cup
  • Carrots (cubed): 1 cup
  • Peas: 1 cup
  • Celery: 1 cup
  • Water: 2.5 cups
  • Salt: according to taste
  • Crushed pepper: according to taste
  • Dried oregano: 1 tsp
  • Dried thyme: 1 tsp
  • Garlic paste: 1 tsp
  • Onion paste: 3 tbsp
  • Extra virgin olive oil: 1 tsp
  • Cumin seeds: 1/4 tsp
  • Ensure® Diabetes Care: 3 tbsp

Method:

Heat oil in a deep-bottomed pan. Add the cumin seeds. Add the onion and the garlic pastes. Saute for 3 min. Add the chicken and the salt. Saute for 10 min. Now add the rest of the ingredients (except the Ensure® Diabetes Care). Cook covered, until the barley is well-cooked. If needed, add more water. Before serving and while still warm, add the Ensure® Diabetes Care to the Chicken-and-Barley and stir well. Check and adjust the seasoning before serving.

9.Creamy Tomato and Basil Soup

Ingredients:

  • Tomatoes (chopped): 1 kg
  • Garlic paste: 2 tsp
  • Onion (medium chopped): 2 cups
  • Dried basil: 2 tsp
  • White pepper powder: 2 tsp
  • Butter: 1/2 tsp
  • Yogurt: 1/2 cup
  • Carrot (chopped): 1/2 cup
  • Salt: according to taste
  • Ensure® Diabetes Care Vanilla shake: 1 bottle
  • Fresh basil: for garnishing

Method:

Heat the butter slightly. Add the garlic paste and saute for 1 min. Add the onion paste and saute for 3 min. Add the rest of the ingredients, except the Ensure® Diabetes Care shake and fresh basil. Pressure cook until two whistles. Let this cool down for 5 min.

10.Breakfast Oats Khichdi with Ensure Diabetes Care

Ingredients:

  • Oats (soaked for 10 min): 1 cup
  • Moong dal: 1 cup
  • Oil: 1 tsp
  • Cumin seeds: 1/2 tsp
  • Bay leaf: 1
  • Dried chillies: 3
  • Turmeric powder: 1/2 tsp
  • Cumin powder: 1.5 tsp
  • Ginger paste: 1 tsp
  • Salt: according to taste
  • Ensure® Diabetes Care: 3 tbsp

Method:

Pressure cook all the ingredients (except the Ensure® Diabetes Care) with sufficient water. Switch off the gas and add the Ensure® Diabetes Care at the end. Make sure to stir the soup well. Blend the mixture. Add the Ensure® Diabetes Care and blend again. While serving, garnish with fresh basil leaves.
